In my experience, it's a long-tail problem. The same thing that made it takes years for true autonomous driving, despite it solving the easy problems almost immediately. LLMs one-shot variations on existing solutions really well. But as soon as you end up in a complicated, bespoke application, it becomes progressively less and less useful. It's easier than ever to start a project with one, but really difficult to finish a project with one.
